Orange French Yogurt Cupcakes

Baking is an exotic art, or so I'd like to think. It's magical how some gooey-doughey stuff placed in the oven turns into spongy, springy cakes! Besides it's addictive. An addiction that's hard to get rid of. So for three days in a row I baked. Then I ran out of eggs and was lazy to get more or look up egg substitutes....thankfully! Instead I found the box of ricotta I had picked on my last grocery trip and made some baked rasmalais. Well, if there's an oven eating up valuable kitchen space, it must be used right? Somebody stop me!!

She said "bake me a cake as fast as you can" and flashed pictures of these golden beauties. Except that they looked orange to me in the evening lights. They beckoned me and off I went to bake them. I copied followed the recipe most of the way with a little tweak - I had to get in some orange. So in went some orange flavoured tang and orange zest for a real flavour and colour. I completely skipped the glazing which we are not fond of. They were soft, moist and a pale orange colour and were polished off with tea. Thanks N! I got 8 cupcakes with these proportions. On the plus side, the are quick, easy to make and entirely 'tweakable' and I certainly am going to try out more variations and flavours with the basic recipe. On the flip side they were a bit too sweet to my liking even without the glazing, so I will reduce the sugar the next time.

Orange French Yogurt Cupcakes

You'll need:
1/2 cup sugar
1/2 cup flour
2 eggs
2 tsps Tang orange flavour
zest of one orange
1/4 cup plain yogurt
1 tsp baking powder
less than 1/4 cup oil

Pre heat the oven to 170 degrees C. Whisk the sugar, yogurt, eggs and orange zest for 4 minutes. Sift the flour, Tang powder and baking powder together and add it to the yogurt-egg mixture till well combined. Fold in the oil and mix lightly. Grease a cupcake mould and pour the batter 2/3rds full in each cup - you will get about 8 - 10. Bake for around 20 minutes till golden. Rest 5 minutes and leave on the cooling rack till completely cool.

You know what...the original actually has a bit of lemon zest and lime juice:)
im sure orange made a great flavour..shud try it the next time.
i tweaked it quite a few times and came up with the simple version which i use mostly as a base for upside down cakes:)
The sweetness bit, I guess works well when paired with a fruit like blueberries or something cos its tart...

If there's an oven eating up valuable kitchen space, it must be got rid of. Or shifted. :) I tried the first option but it came back to me, then I shifted it, use it very little. :(

Nisha, so it is a citrus cake! I will try your upside down cake some other time. You cook a lot of interesting stuff, really. I'm gonna try some more recipes from yours.
Sra, lol! It's fixed so both options aren't options for me! Infact, I'm even toasting bread in the oven these days, just to use it!

This is a fantastic idea for a cupcake! I had made a similar cake years ago and I remember it being very popular.
