Schezwan Rice



It's fairly quick to fix an Indo-Chinese dinner, especially if your guests like this cuisine. You can have a variety of dishes which hardly take much cooking time. I think I spend more time chopping up the vegetables than actually cooking the dish. This recipe for schezwan rice is long overdue. So let's get straight to it!

You will need:
3 cups cooked rice
¾ cup of diced carrots, beans and peas
¾ cup of leeks/spring onions
Ajinomoto – optional
Schezwan sauce – see recipe here
Salt, pepper
Colour – optional
Note: I do not use colour or msg in my recipes

Blanch the carrots, beans and peas. Heat oil and butter in a pan. Stir fry the vegetables for 2 minutes. Add the rice, schezwan sauce, salt, pepper, colour, ajinomoto and leeks/ spring onions and stir fry. Garnish with leeks/spring onions. Serve with Chilli chicken or Manchurian.

Thanks for visiting my blog! :) I love Chinese-style fried rice, too, but find myself having to use lots and lots of oil to get the separate grains, they way they do it in Chinese restaurants.

I like Indo -chinese rather than the chinese ;) The best fried rice I ever tasted is from our kerala restuarants...I make fried rice but never tried with a Schezwan sauce...should try that once...Is this part of ur V-day dinner ?;)

Jyothsna, you sure are blogging a lot of Indo-Chinese Cuisine. My fav!!

I like you recipe for Schezwan rice and the fact that you prepare your own sauce. Its always so much better than the store bought ones..:). What makes it even more appealing is there is no use of color or msg!

i make a simple fried rice and so ur schewan versio is a great change. will be trying it soon.do u really need to blanch the veggies? i stir fry as is. also finally a homemade sauce!

Sailaja - Yeah, we do like Chinese:) With a home-made sauce, the use of oil can be cut down, can also avoid msg and colour.

Shaheen - Blanching the vegs reduces use of oil while stir frying. Yeah, the home made sauce is far better than the ones I've bought!:)
